Keep it simple; No flavor infused versions or “cool” product names

We have 2 offerings for you. An early harvest EVOO (which also happens to be Organic) and our all-around, Family Estate variety. The way we use these 2 oils at home is simple. We reach for the early harvest edition when we plan to eat the oil raw.
So, we use it mainly on its own as a salad dressing or as part of a vinaigrette and heavily as a finishing oil at the end of cooking or right before the food is served (think grilled fish, vegetables and steak). This version essentially feels right at home on the kitchen counter as well as the dinner table. We prefer to use the Family Estate version for cooking especially when sauteing and grilling as well as a base for sauces. Occasionally we fry with it as well, but the truth is that we try to stay away from too much frying and this oil actually helps us do that as it imparts the dish with so much flavor in the cooking process that makes eating healthier, tastier as well.
We don’t want to bore you with the details, we just find that we like the early harvest more in its rawest of forms (it has a much sharper flavor profile, also much higher polyphenol content, but this is common with early harvest oils), whereas we prefer the Family Estate version as a binding agent for cooked dishes (stews, sauces etc.) as we feel that it works better in bringing flavors together in the background.
